happy birthday wells street market!

This week marks one year in business at The Wells Street Market. ONE YEAR! The support for our tiny spot on the corner of Wells and Wacker this past year, has been overwhelming, in the best possible way. Watching first time customers, hesitant to give a new name in the Chicago food scene a try, become regulars who bring their friends and colleagues, is still so surreal. Despite our city’s reputation for steak and potatoes, it is clear that Chicago wants healthy, wholesome, clean food, that’s not just good for you but also tastes delicious. This has always been and continues to be at our core. We not only find inspiration in the flavors of the season but in all of you, and we want to thank you for that. We want to thank you for choosing to support a women-owned, local business every time you eat at FARE and we want to thank you for spreading the word. We are beyond humbled by all of it. Now, If you know anyting about us, you know we love a good party! So...

To celebrate 1 year  of FARE we have planned a rosé themed wine night. Bites inspired by the season, refreshing rosé, open-air windows, cool people, maybe even a birthday cake. What could be better?

What's your role at FARE?

I do everything :) roast veggies, cashier, catering and make smoothies.

What do you always have in your fridge?

shrimp, meat, chocolates

Favorite FARE menu item?

sesame eggplant (from the winter menu) and the rose smoothie.

When you're not at FARE?

I'm spending time with my daughter

We are firm believers that what you put in your body matters (duh!) and that means incorporating living probiotic-rich foods, daily! Some of our favorites include sauerkraut, kombucha, and the super fermented coconut yogurt, Coconut Cult. Started by some friends in California who wanted to share their love of super strong probiotic coconut yogurt, Coconut Cult was born. “Unlike anything else and probably the most powerfully probiotic food you've ever had. We small batch ferment 800 billion highly active probiotics into every quart, creating an insanely probiotic coconut yogurt.” With 25 billion probiotics per 2 Tbsp. serving it packs quite the punch. Because these yogurts are “extra fermented” they’re going to be a little more sour than your typical yogurt. With no starches or gums they also have the cleanest ingredients of any plant based yogurt out there. We love enjoying this tangy creamy treat atop sliced fruit with a scoop of granola, a dollop on a smoothie or protein packed pancakes is always a winning combo too.
